A Tokyo-Inspired Entrance Sets the Stage

Guests now enter through a glowing tunnel of playful Japanese text — a nod to the neon lights of the Shinjuku District. Inside, the vibe shifts immediately. A backlit sushi bar bursts with magenta, vermillion, and electric violet brushstrokes, while the main dining room blends Tokyo’s rain-soaked street aesthetic with traditional Japanese Yakisugi-style charred wood.

 

Despite the high-energy design, lantern-lit tables and warm textures keep the atmosphere fun, relaxed, and perfect for dinner before a night out at MGM Grand.

In true Morimoto fashion, the updated menu blends Japanese culinary tradition with Western flavor and technique — the kind of East-meets-West cooking that made him a global star.

The refreshed Morimoto Las Vegas menu showcases a wide range of dishes, from delicate sashimi to wagyu steaks to teppan-grilled seafood. Highlights include:

A smoked sushi roll packed with wagyu beef, sweet shrimp, crab, and tobiko.

Chef’s Combination Sushi
